American Carrot Cake Ingredients: - 1 glass dark raisins - 450 g carrots - 2 glasses flour (without top) - 2 teaspoons baking powder - 1/2 - 1 teaspoon baking soda - 1 teaspoon salt - 2 teaspoons cinnamon - 1 tablespoon cocoa - 5 eggs (or 4 big ones) - 2 teaspoons vanilla extract - 1 glass white sugar - 1 glass brown sugar (with top) - 1 ¼ glass vegetable oil - 150 g chopped walnuts For the frosting: - 450 g cream cheese, softened - 100 g butter, softened - 1 teaspoon vanilla extract - 2 glasses bolted powdered sugar Directions: 1. Preheat oven to 180ºC. Grease three baking forms (22 cm in diameter), put baking paper inside and also grease it. 2. Steam the raisins thoroughly for 10 min, put them in an open bowl and set aside. 3. Grate the carrots, set them aside. 4. Bolt the flour, baking powder, baking soda, cocoa, salt, and cinnamon. 5. Beat up the eggs with a mixer. Add vanilla extract, both kinds of sugar, and vegetable oil, stir well. Add the dry ingredients (Item 4) and stir at low speed. Add the carrots, raisins, and chopped walnuts, stir well. 6. Divided the pastry into three even parts and put it into the baking forms. Bake for 40-45 min till ready. Cool the cake layers well. 7. To make the frosting stir the cream cheese and butter, add vanilla extract and powder sugar, stir well with a mixer. 8. Fill and frost the cooled cake layers. 9. Put the cake into the fridge for at least several hours, better - for a day before serving.
